Description
Monfragüe is a natural park covering nearly 180km2 in the province of Cáceres; it extends along the Tajo river as it cuts through a mountainous ridge. The park is best known for its rock formations such as the Salto del Gitano and its bird life with a large population of Eurasian black vultures and eagles (Spanish imperial, golden, and Bonelli's).
Access & Transport
The park is best accessed from Villareal de San Carlos, about 30km southeast of Plasencia (EX-208) and 70km northeast of Cáceres (EX-390). There appears to be a regular bus shuttle (every 30mins) from the parking area to the castle ruins. Unclear whether this is year-round.

Do not forget to bring your binoculars, if you have some. There are several hiking routes within the park

Conclusion
Monfragüe NP is probably not an out-of-region highlight and destination but those taking on Extremadura and who enjoy the outdoor would do well to spend half a day there, for a hike and/or raptor & vulture watching.
